Year-round Summer Salad

This is one of the simplest and most delicious salads you can make for a crowd in less than 20 minutes.

Start with ingredients that are simple, fresh and visually stunning.


  • 2 cups sliced mini cucumbers

  • 2 cups halved grape tomatoes

  • 1/4 cup diced red onion

  • 3/4 cup diced green bell pepper

  • 1 can (15.5 oz.) reduced-sodium chickpeas (garbanzos), rinsed and drained

  • 1/4 loosely packed flat-leaf parsley leaves, finely chopped

  • 1/4 cup olive oil

  • Juice from half a lemon

  • 3 Tbsp red wine vinegar

  • Salt and pepper to taste

How to Make It

  1. Pour all the vegetables into a large bowl

  2. Add the olive oil, lemon juice, red wine vinegar and salt & pepper

  3. Mix slowly all of the ingredients and cover with plastic wrap

  4. Refrigerate at least one hour, or overnight, before serving (If serving the next day, make sure to taste and re-season the salad)
